After a cold, snowy winter one appreciates the warmth of summer. Being home this summer means one big thing to me....a POOL! Last summer I think I swam one time. ONE TIME! That's it. We were at the Bavarian Inn for our anniversary, and we got in the infinity pool that overlooks the Potomac. We stayed at the edge and bobbed around watching kayakers and fishermen make their way down the river. So far since moving home, I've gone swimming almost every day. There's something about putting your 8 month pregnant belly into water that there is simply no words for. I'm pretty sure my pink pool noodle is my best friend this summer. On this first official day of summer I took myself to the pool and thought about what I wanted to eat. Actually, most of my life is spent thinking about what I want to eat. Being pregnant hasn't really had an effect on me as far as food goes. I don't have any aversions to things I loved, nor do I crave things I used to hate. I still enjoy creating and trying new foods. Hopefully Juniper will grow up to have a desire to eat lots of yummy foods too! (I seriously can't and won't live on chicken tenders, kid.) So, while floating around in the sun I had an idea to make Brian and I some Pad Thai for dinner. We LOVED a little place in Shepherdstown, WV called Kazu. They had the best Pad Thai and sushi. And to be completely honest, that was probably in our top 3 reasons why we would miss our home in Martinsburg. We would go to eat there almost once a week. So I decided that making him some Pad Thai would be a great idea. However, I didn't want to load up on noodles and eat so heavy on the first day of summer. Therefore, I modified and found a delicious way to enjoy the meal with none of the guilt... a lightened up Chicken Pad Thai!
