A few days ago I made super easy chicken enchiladas where I used half a rotisserie chicken. Today, to make use of the remaining half, I'm making a quick chicken salad to go on lettuce cups. This can seriously be thrown together in about 5 minutes. The longest part is prepping the chicken. You can chop or shred it like I did for the enchiladas; which is the way I made mine today.
