Well boys and girls, it's time to bust out the big ol' winter coat and the extra blankets because the Arctic winds have arrived! *Pulls cardigan a little tighter* When the weather gets super cold like this I like to make something warm and spicy to warm up. I decided on making an Emeril shrimp creole due to having almost all the ingredients I needed to pull it off, including a big bag of XL Shrimp. Isn't that like an oxymoron or something? Anyways, this meal was bangin' even if I was short on a few items. It's been a goal of mine to get to New Orleans for a few years now. Brian and I have spent many hours looking up places to stay and eat.....mainly eat. I'm a HUGE fan of beignets, and I will get to eat one on the French Quarter. If I could go right now, I'd stay at The Old No. 77 & Chandlery and plan on going out to eat somewhere new every. single. hour. including Atchafalaya, Boucherie, and Angeline....because I mean look.... Now that I'm fully ashamed to post any more food pictures, I'll just go ahead and get to it! Also, if you can muster up the strength to put yourself into the cold wind and run in your local grocery store to grab up a bag of shrimp, do it! You'll be glad you did once you're sitting down to your plate of soul warming creole! Tonight's Dinner: Shrimp Creole (kinda) ;)

We are a household that LOVES burgers, though we rarely ever have buns...is that weird? I think it's a subconscious effort to limit the amount of bread we consume. However, we are all about that Friday night pizza! #amiright?! I've never had an oriental burger before this one, and quite honestly I don't how I could live without them now. THEY ARE SO DANG GOOD! The fresh ginger and the Hoisin ketchup take it to an extreme level of deliciousness. Let's get to it because you NEED to go make these....like now! Tonight's Dinner: Oriental Burgers with Hoisin KetchupBeing a teacher means you never really outgrow getting excited for a snow day. Even though I'm currently taking some time off and it's a Sunday, waking up to the surprise of snow is still super exciting. When I realized what had happened while we slept, I quickly grabbed Juni and ran her to the window. She could definitley tell something was up; though I'm pretty sure her thoughts were more along the lines of, "Why's this lady running me around like a lunatic?!" Embrace it darling, there's plenty more where that came from! Brian left for Martinsburg early this morning. He still goes back once or twice a month to shoot skeet at the Izaak Walton League with some friends. So to take full advantage of the snow day and empty house, I turned on my favorite holiday Pandora station, Frank Sinatra Holiday, and gathered some supplies to make a few Christmas gifts. I first made these lotion bars a few years ago and people LOVED them. They are super easy to make and only require 4 ingredients. Can't get much easier than that! If you make these, let me know how you like them! Today's Craft: All Natural Lotion Bars (diy)A few days ago I made super easy chicken enchiladas where I used half a rotisserie chicken. Today, to make use of the remaining half, I'm making a quick chicken salad to go on lettuce cups. This can seriously be thrown together in about 5 minutes. The longest part is prepping the chicken. You can chop or shred it like I did for the enchiladas; which is the way I made mine today. Today's dinner: Chicken Salad on Lettuce Cups with DillWell, Juniper Bea Pearl is here! She arrived on July 30th at 4:47 pm. Absolutely no books, no movies, no pamphlets, no chats with friends who've gone down the path before you can prepare for the moment you become a parent. Juniper's birth didn't go exactly how I'd hoped, though I'm sure few moments in parenthood do. However, she came out healthy, beautiful, and with a full head of hair! She is totally the happiest little girl I've ever met. It's hard to believe how fast time goes! She is already FOUR months old (& I'm just now starting to feel like I'm getting the hang of this motherhood thing.) Juni is full of giggles & smiles. She loves story time and trying to turn the page before I've finished reading it, blowing bubbles and being cuddled. We just recently had our first family pictures taken and they turned out adorable! I've managed to slowly work time for me to cook into our schedule. Juni has the cutest little frog chair that she sits in and watches me. Most of the time she'll give me a big smile and giggle, so I think she approves of my cooking.
