Well boys and girls, it's time to bust out the big ol' winter coat and the extra blankets because the Arctic winds have arrived! *Pulls cardigan a little tighter* When the weather gets super cold like this I like to make something warm and spicy to warm up. I decided on making an Emeril shrimp creole due to having almost all the ingredients I needed to pull it off, including a big bag of XL Shrimp. Isn't that like an oxymoron or something? Anyways, this meal was bangin' even if I was short on a few items. It's been a goal of mine to get to New Orleans for a few years now. Brian and I have spent many hours looking up places to stay and eat.....mainly eat. I'm a HUGE fan of beignets, and I will get to eat one on the French Quarter. If I could go right now, I'd stay at The Old No. 77 & Chandlery and plan on going out to eat somewhere new every. single. hour. including Atchafalaya, Boucherie, and Angeline....because I mean look.... Now that I'm fully ashamed to post any more food pictures, I'll just go ahead and get to it! Also, if you can muster up the strength to put yourself into the cold wind and run in your local grocery store to grab up a bag of shrimp, do it! You'll be glad you did once you're sitting down to your plate of soul warming creole! Tonight's Dinner: Shrimp Creole (kinda) ;)

We are a household that LOVES burgers, though we rarely ever have buns...is that weird? I think it's a subconscious effort to limit the amount of bread we consume. However, we are all about that Friday night pizza! #amiright?! I've never had an oriental burger before this one, and quite honestly I don't how I could live without them now. THEY ARE SO DANG GOOD! The fresh ginger and the Hoisin ketchup take it to an extreme level of deliciousness. Let's get to it because you NEED to go make these....like now! Tonight's Dinner: Oriental Burgers with Hoisin KetchupBeing a teacher means you never really outgrow getting excited for a snow day. Even though I'm currently taking some time off and it's a Sunday, waking up to the surprise of snow is still super exciting. When I realized what had happened while we slept, I quickly grabbed Juni and ran her to the window. She could definitley tell something was up; though I'm pretty sure her thoughts were more along the lines of, "Why's this lady running me around like a lunatic?!" Embrace it darling, there's plenty more where that came from! Brian left for Martinsburg early this morning. He still goes back once or twice a month to shoot skeet at the Izaak Walton League with some friends. So to take full advantage of the snow day and empty house, I turned on my favorite holiday Pandora station, Frank Sinatra Holiday, and gathered some supplies to make a few Christmas gifts. I first made these lotion bars a few years ago and people LOVED them. They are super easy to make and only require 4 ingredients. Can't get much easier than that! If you make these, let me know how you like them! Today's Craft: All Natural Lotion Bars (diy)A few days ago I made super easy chicken enchiladas where I used half a rotisserie chicken. Today, to make use of the remaining half, I'm making a quick chicken salad to go on lettuce cups. This can seriously be thrown together in about 5 minutes. The longest part is prepping the chicken. You can chop or shred it like I did for the enchiladas; which is the way I made mine today. Today's dinner: Chicken Salad on Lettuce Cups with DillWell, Juniper Bea Pearl is here! She arrived on July 30th at 4:47 pm. Absolutely no books, no movies, no pamphlets, no chats with friends who've gone down the path before you can prepare for the moment you become a parent. Juniper's birth didn't go exactly how I'd hoped, though I'm sure few moments in parenthood do. However, she came out healthy, beautiful, and with a full head of hair! She is totally the happiest little girl I've ever met. It's hard to believe how fast time goes! She is already FOUR months old (& I'm just now starting to feel like I'm getting the hang of this motherhood thing.) Juni is full of giggles & smiles. She loves story time and trying to turn the page before I've finished reading it, blowing bubbles and being cuddled. We just recently had our first family pictures taken and they turned out adorable! I've managed to slowly work time for me to cook into our schedule. Juni has the cutest little frog chair that she sits in and watches me. Most of the time she'll give me a big smile and giggle, so I think she approves of my cooking. (Or maybe it's the singing and dance moves she's laughin at!) ;) Tongiht's Dinner: Easy Chicken EnchiladasHey EVERYONE it's free slurpee day at 7-11! Sadly my day did not consist of free slurpees because I just found out and it's nearly bedtime...boooo! However, I have so many questions regarding the "free-ness" of these slurpees. Do you get unlimited free slurpees? Do they care if you just fill it up, drink it while perusing the aisle of gum then return to the machine, fill, and repeat? Or does one have to go home, suck down that slurpee and get a brainfreeze while simultaneously changing clothes to go back incognito for another free slurpee? I NEED TO KNOW! Alas, I guess I'll have to wait until next 7-11. And this time I'm marking my dang calendar! I won't be the last to know again!!! While I sit and come to terms that I missed out on a great frozen treat opportunity, let me also share that I tried something brand new today! It won't seem like much to you (maybe), but it was quite an accomplishment for me. I made salmon! Well, technically I didn't "make" salmon, but I did cook it like a champ! I'm not a big fan of fish - touching, smelling, eating.. none of the above. However, Brian loves fish. He recently went with my mom and ordered a small shipload of salmon and cod. So now that our freezer looks like something from the deadliest catch (I totally wish it was a freezer full of crab!!), I have to try to use up some of them! And that's just what I did! Surprisingly, it was super fast and simple. Take a peek at my first attempt at a fish dinner dish! Tonight's Dinner: Lemony Garlic Salmon with Brown Rice and PeasJuly is all about the hot weather, cookouts with great food, and of course celebrating our independence. While this year's July 4th celebration was kind of drab in the weather department, we made up for it with the food & celebrating. Cookouts on the farm could quite literally feed an army. Everyone brings multiple dishes and we sit around eating and making numerous trips back to the food tables until we can't move. Considering a gathering on the farm easily brings in 30 people, you can imagine the feast. Usually after eating I like to roll myself down to the pool and lounge around for a bit. Today however, I wanted nothing more than to take my well-rounded, totally stuffed self and conduct a serious cannonball just to show the kiddos who's boss. While these visions of the ultimate cannonball and tsunami sized wave I'd create danced in my head, I knew unless I wanted to welcome my baby today that I'd better skip on the mega splash take down. #nexttime This year's fireworks were supplied by Dustin who serves in the US Navy. We were glad he could get some time to spend with his mom and sister, and have a little fun on the farm with us too. Of course when it was time to set these said fireworks off, my husband gladly volunteered. Now if you've ever seen a kid receive the perfect gift at Christmas, (Nintendo 64 anyone??), then you've seen my husband with fireworks. He held them in his hand like Lady Liberty and sent them rocketing toward the night sky. Later, he battled my cousin with a roman candle. That folks is when we realized we were in it just a little too far. The night came to a wrap a little while after all the boys came back with all their eyebrows and fingers still visible. Phew! I hope everyone had a wonderful 4th with friends, family, and your fair share of amazing food. Thanks to all our veterans and to the active duty men and women who keep our country safe and provide us the freedoms we too often take for granted. Today's Cookout Approved Dessert: Mixed Berry PieNormally on a rainy day I'd head out for a day of shopping. However, being that the closest shopping is now about 45 minutes away, rainy day shopping is not going to be happening. Also, my feet have been swelling to about 1,000 times their size after spending just a few minutes on them. It's GLOOOOOORIOUS! So instead of putting my husband through another night of foot rubbing, I decided to lounge around and watch Netflix. I love to binge on all of Bourdain's shows (particularly Parts Unknown) and Everybody Loves Raymond. After watching my fair share of amazing food being devoured by Anthony and Frank, I had an urge to make something for myself.
